Lori’s Favorite Salad
Ingredients for Salad
- 1 head of iceberg lettuce
- 1/2 lb fresh spinach
- 1 head cauliflower
- 1 bunch broccoli
- 5 carrots
- 1 cup large curd cottage cheese
- 1 lb bacon
Ingredients for Salad Dressing
- 1 tsp poppy seeds
- 1 tsp dry mustard
- 1 cup sugar
- 3/4 cup oil
- 1/2 cup apple vinegar
- 1 cup large curd cottage cheese
Instructions
1. Rinse all lettuce and vegetables.
2. Tear lettuce and spinach into bite-size pieces
3. Cut cauliflower and broccoli into small pieces
4. Slice carrots
5. Toss lettuce, spinach, cauliflower, broccoli, and carrots.
6. Fold in large curd cottage cheese.
7. Crumble cooked back and fold into salad.
8. Mix all ingredients of the salad dressing together and old in cottage cheese
9. Pour dressing over salad.
10. Toss and enjoy.
Yield: 20 cups
For crispy bacon with less fat, use the Small Ridged Baker in the microwave
If you aren’t feeding a crowd, divide the ingredients in half and use 1/3 cup of oil
